Satun olemaan sitä tyyppiä pitsansyöjä, johon eivät ne tuhannet täyteet tee minkäänlaista vaikutusta. Pitsa pitsana, pihvi pihvinä. Juustoa ja tomaattia sen sijaan saa olla ihan niin paljon kuin haluaa.
Tänään tein Rucola – pikkutomaattipitsaa, jonka voisin toki nimetä myös Madridin makuiseksi pitsaksi, koska se nyt vaan maistui Madridille 😉 Lieneekö syynä oliiviöljy (ne käyttää kaikkeen oliiviöljyä) valkosipuli (-ja valkosipulia), sitruuna vai yleisesti kaikki tuoreet, hyvälaatuiset ja -tuoksuiset raaka-aineet. Vai kenties se tosiseikka, että olin just Madridissa ja se tunkee mun päähäni oli aihe mikä hyvänsä 😉
Taikina (2 pyöreää pitsaa Ø30cm tai koko pelli):
500g vehnäjauhoja / paketti (50g) hiivaa / 1 teelusikallinen sokeria / 4dl huoneenlämpöistä vettä / 2 teelusikallista suolaa / 2 ruokalusikallista oliiviöljyä
Täyte:
200g rucolaa / yksi puntti persiljaa / yhden sitruunan kuori raastettuna / 2 valkosipulin kynttä / 300g pikkutomaatteja / oliiviöljyä paistamiseen / suolaa ja jauhettua pippuria mausteeksi / 100g hienonnettua parmesaania / raastettua mozarellaa
Taikina: Mitta jauhot kulhoon ja tee keskelle kuoppa, johon murennat hiivan. Lisää joukkoon sokeri ja noin desi vettä. Sekoita taikinaksi, niin että osa jauhoista jää reunoille. Peitä muovikelmulla ja anna seistä 15min. Lisää sitten oliiviöljy, suola ja loput vedestä. Vaivaa taikina palloksi ja kohota tunti. Sekoita sitten nopeasti, jaa kahtia ja kauli osa pyöreiksi levyiksi. Laita uuni lämpenemään 250 asteeseen (kiertoilma 230) ja valmistele täyte.
Täyte: Jätä jokunen rukolalehti koristeeksi ja hienonna loput. Hienonna myös persilja ja sekoita se raastetun sitruunan kuoren kanssa: purista sitruunan mehu seoksen päälle. Halkaiset tomaatit kahtia. Ruskista pannulla hienonnettu valkosipuli ja rukola oliiviöljyssä ja lisää rukolaseos sitruuna-seokseen. Jaa seos kahtia ja levitä taikinalevyjen päälle. Ripottele sitten hienonnettu parmesaani, tomaatit ja lopuksi mozarellaraastetta. Paista uunin alimmalla tasolla 10-15 min. ja koristele rukolalla.
Ohje ei oo Madridista, vaan jostain norjalaisesta naistenlehdestä. Silti.
Maistui täydellisyyttä hipovalle pitsalle saunan jälkeen. Saunan jälkeen! Ekan saunan jälkeen. Meillä on ihan oikea SAUNA!! Wuhuu ❤
