Marenkipohjan voi valmistaa jo aikoja ennen tarjoilua ja säilyttää kuivassa. Juuri ennen tarjolua levität kerman päälle ja koristelet kauden marjoilla. Kermaan voi käyttää tavallista vispikermaa, kermaa maustettuna sitruunalla tai kermaa sekoitettuna vanilja- tai rommikastikkeeseen.”
Marenkipohja:
4 kananmunan valkuaista / neljästeelusikallinen suolaa / 2,5 dl sokeria / 2 tl maizenaa (maissitärkkelystä) / 1 tl (valkoviini)etikkaa
Täyte (esim):
paketti valmista vaniljavaahtoa/-kermaa / 2 dl kermaa vaahtona / 2 rkl sokeria
Uunnissa n.125 asteessa noin 2 tuntia.

Laita huoneenlämpöiset munanvalkuaiset puhtaaseen, kuivaan lasi- tai teräskulhoon. Sekoita hitaasti vatkaimella, kunnes saat pehmeää vaahtoa. Lisää nopeutta kunnes vaahdon kuplat ovat tasoittuneet pieniksi. Lisää pienissä erissä sokeri, kun vaahto alkaa jähmettymään. Sekoita reippaalla vauhdilla kunnes seos on pehmeä ja kiiltävä ja sokeri liuennut. Älä sekoita kuitenkaan liian kauan, tai seoksesta tulee rakeinen.

Kääntele siivilän läpi sekaan maizena ja etikka lusikalla.

Levitä seos leivinpaperille noin 24cmØ ympyräksi, noin 2,5cm korkeaksi.

Paista kakkua noin kaksi tuntia kunnes se on rapea ja vaalean kermanruskea. Sammuta uuni, mutta anna kakun jäähtyä uunin sisällä. Ota kakku ulos ja käännä tarjoilualustalle.

Leivitä kerma kakun päälle, koristele vaikkapa mansikoilla, mustikoilla ja viinirypäleillä ja ripottele tomusokeria päälle.
Loistava, helppo kesäherkku. Kesäavajaisia vietitettiin meillä tänään 🙂
